Chocolate Balls (Vegan, gluten free, sugar free, AND raw!)

If you like to eat, you must try these. These are a favorite of mine and the majority of my clients. They are like chocolate truffles, only they're healthy. Really! Even better, they're easy to make and can be made in excess to be stored in your freezer to satisfy any sugar cravings or to serve to guests.

 It helps to have a food processor, but it's not needed. Scroll down for the recipe.

Wait until your sugar cravings are hit with this! They taste divine!

Ultimate Chocolate Balls
1 cup organic dates (soak them for ½ hour previous to using them)
4 tbsp organic cacao powder (choose raw if you want these raw)
½ to ¾ cup almond butter (again, choose raw if you want these raw)

Place ingredients in food processor.....or use some elbow grease! Blend until creamy like fudge. Taste test to see if you need more cacao or other ingredients. Feel free to add cinnamon, peppermint, vanilla or other flavors at this point.

Spoon out the “batter” and roll into small balls. Experiment with rolling the balls in coconut, cacao powder, cardamom, or poppy seeds as toppings. Indulge and devour. These provide you with protein, antioxidants, essential fatty acids, energy, and lots of vitamins and minerals.

Some fun variations: Use organic peanut butter instead of almond butter. Try with carob powder. Use raisins or figs instead of dates. Add more ingredients, like crumbled rice cakes (makes it like a rice crispy treat), chucks of nuts, coconut, etc. Or stuff these chocolate balls into fruits, spread on toast, or pop them into someone's waiting lips. 

Make a lot. I promise you'll be glad you did. Store them for a week or so (I keep mine on my counter) or stock them in your freezer.
